Pork & Leek Ragu with Mascarpone

Pork & Leek Ragu with Marscapone

500g of pork mince
1/2 a leek, finely chopped
1 small onion or shallot, chopped
1/2 cup of mascarpone cheese
1 tsp oregano
1/2 tsp of cracked black pepper
A splash of white wine or white wine vinegar
1 tablespoon of green pesto
salt to taste
1 tsp of butter

Directions
- Cook spaghetti while preparing ragu
- Fry off the leek and onion until soft
- Add oregano and black pepper
- Add pork mince to the pan and cook until browned
- Deglaze the pan with a splash of white wine (or white wine vinegar), cook out
- Remove from heat and add the butter and mascarpone and pesto, combine
- Drain pasta and add to pan, combine, twist and plate
