Beef Taco Salad
You’ve heard of poke bowls? How about using that same concept, but with a Mexican influence with this beef taco salad. The freshness and zing of coriander and lime, combined with the spiciness of taco beef.

Beef Taco Salad

Ingredients
500g beef mince
1 large onion, diced
1 red pepper, diced
1/2 tsp of paprika
1/4 tsp of cayenne pepper
1/2 tsp of cumin
1/2 tsp of oregano
1/2 tsp of garlic powder
1/4 tsp of onion powder
1/4 tsp of celery salt
1/4 tsp of sugar
1/4 tsp of black pepper
2 tbsp tomato paste
1/2 tsp of cornstarch in water to make the gravy / make it glisten at the end
Directions
- Sauté the onions and peppers until soft, add the mince and brown
- Add in all the herbs and cook until dry
- Add in tomato paste and cornstarch mixture and cook a few more minutes
- Serve poke bowl style: a spoonful of white rice, half an avocado (chopped), a handful of salad greens, fresh chopped coriander, pickled peppers and onions, charred sweetcorn, and a few spoons of the taco beef. Squeeze half a lime over the top and add a dollop of yoghurt if you don’t like too much spice.
