Ingredients
8 dried shitake mushrooms
1 egg, beaten lightly
2 tablespoons soy sauce
1 teaspoon sesame oil
2 teaspoons grated fresh ginger
500g chicken mince
2 tablespoons hoisin sauce
6 spring onions, chopped finely
230g kingfisher can water chestnuts, drained, chopped
8 large lettuce leaves
Directions
- Place mushrooms in small heatproof bowl, cover with boiling water, stand 20 minutes; drain. Discard stems; chop caps finely.
- Combine egg, soy sauce, oil and ginger in medium bowl, add mince, mix well, cover; refrigerate 1 hour or overnight.
- Cook chicken mixture and mushrooms in heated oiled wok or large frying pan, stirring, about 10 minutes or until separated and cooked through. Add hoisin, onion and water chestnut, stir-fry until heated through. Serve in lettuce leaves.
