Creamy Madeira Sauce
Madeira sauce is rich, slightly sweet, and very delicious accompaniment to beef, pork or chicken. Madeira sauce is traditionally served with beef wellington, but it works with many proteins.

Whether you choose to do a full family-size beef wellington, or a small individual serving (rump steak is great for this), madeira sauce is the perfect accompaniment.

Ingredients
30g butter
¼ cup Madeira
1 ½ tablespoons chopped fresh tarragon
300ml cream
1 teaspoon corn flour
2 teaspoons water
Directions
- Heat butter in pan, stir in Madeira. Stir in tarragon and cream, bring to boil, stir in blended cornflour and water, stir over heat until sauce boils and thickens.
- Makes about 1 ½ cups
