Beef, Bean & Bacon Chilli

This rich and unctuous beef, bean & bacon chilli is a versatile family or party meal. Serve it with rice, in tacos, or on nachos. The bacon and a few other secret ingredients give it a layered and complex flavour profile.

The smokiness saltiness of bacon is a great addition to many dishes! This chilli uses bacon lardons to add super flavour, and it uses the oil from the cooked lardons to cook the rest of the dish.

Secret ingredients

Here are three ingredients that make this chilli even more delicious and the flavour more complex than your standard chilli. Pork mince is one of my secret weapons when it comes to chilli and bolognese. The mix of 1 part pork mince to 2 parts beef mince really brings the dish alive.

The other secret ingredients? Coffee and dark chocolate! The coffee brings that bitter and umami to the dish; and the chocolate adds the necessary touch of sweetness. You’ll be surprised at how delicious these make it.

Ingredients

  • 500g beef mince

  • 200g pork mince

  • 1 can of red kidney beans in water

  • 100g of bacon lardons or bacon chopped

  • 1 white onion, chopped

  • 1/2 a red pepper, diced

  • 3 garlic cloves, minced

  • 1-2 squares of dark chocolate

  • 1/2 black coffee

  • 1-2 tsp of chilli powder (depending on your taste)

  • 1 tsp paprika

  • 1 tsp of cumin

  • 1 beef stock cube

  • 2-3 tablespoons of tomato paste

Directions

  • Fry off the bacon / lardons and diced onion, garlic and pepper until soft
  • Add pork and beef mince
  • Once browned, add the herbs and cook off until the meat juices have cooked off
  • Drain and rinse the kidney beans and add
  • Add the tomato paste, coffee, stock cube and 1 cup of water
  • Simmer on a low heat for 30-40 minutes, checking every 10 minutes – add more water in small batches if needed.
  • Add small square of chocolate – let melt and taste before adding more.
  • Taste test and adjust seasoning if needed.
  • Serve on white rice with grated cheese and sour cream, or on nachos.
