Beef Taco Salad

Bring the flavours of Mexico to your home kitchen with this Beef Taco Salad.

Ingredients

  • 500g beef mince

  • 1 large onion, diced

  • 1 red pepper, diced

  • 1/2 tsp of paprika

  • 1/4 tsp of cayenne pepper

  • 1/2 tsp of cumin

  • 1/2 tsp of oregano

  • 1/2 tsp of garlic powder

  • 1/4 tsp of onion powder

  • 1/4 tsp of celery salt

  • 1/4 tsp of sugar

  • 1/4 tsp of black pepper

  • 2 tbsp tomato paste

  • 1/2 tsp of cornstarch in water to make the gravy / make it glisten at the end

Directions

  • Sauté the onions and peppers until soft, add the mince and brown
  • Add in all the herbs and cook until dry
  • Add in tomato paste and cornstarch mixture and cook a few more minutes
  • Serve poke bowl style: a spoonful of white rice, half an avocado (chopped), a handful of salad greens, fresh chopped coriander, pickled peppers and onions, charred sweetcorn, and a few spoons of the taco beef. Squeeze half a lime over the top and add a dollop of yoghurt if you don’t like too much spice.
