Healthy, fresh and easy to whip up at short notice; these tasty Asian-inspired chicken in lettuce cups are a fun way to serve your dinner.

Ingredients

  • 8 dried shitake mushrooms

  • 1 egg, beaten lightly

  • 2 tablespoons soy sauce

  • 1 teaspoon sesame oil

  • 2 teaspoons grated fresh ginger

  • 500g chicken mince

  • 2 tablespoons hoisin sauce

  • 6 spring onions, chopped finely

  • 230g kingfisher can water chestnuts, drained, chopped

  • 8 large lettuce leaves

Directions

  • Place mushrooms in small heatproof bowl, cover with boiling water, stand 20 minutes; drain. Discard stems; chop caps finely.
  • Combine egg, soy sauce, oil and ginger in medium bowl, add mince, mix well, cover; refrigerate 1 hour or overnight.
  • Cook chicken mixture and mushrooms in heated oiled wok or large frying pan, stirring, about 10 minutes or until separated and cooked through. Add hoisin, onion and water chestnut, stir-fry until heated through. Serve in lettuce leaves.
