Greek Garlic Sauce

Do you love garlic as much as we do? This easy Greek garlic sauce is a tasty accompaniment to kebabs, barbecued chicken or pork.

Keep the Vampires Away

Feel free to increase the level of garlic in this sauce recipe. 2 cloves is the minimum, but if you are a big garlic fan, then don’t be shy, you can add more if you want.

This sauce goes amazingly with our lamb neck fillet kebabs.

Ingredients

  • 1 large potato, chopped (300g)

  • 2 cloves garlic, crushed

  • ½ cup white vinegar (125ml)

  • ½ cup light olive oil (125ml)

  • 1/3 cup water, approximately (80ml)

Directions

  • Boil, steam or microwave potato until tender, drain. Process potato (mash), garlic vinegar and oil until smooth. Add just enough water to give a pouring consistency. Serve here with lamb kebabs
  • Makes about 2 cups.
