JPs Marinated Poussin Chicken (Spring Chicken)

A poussin is a small, young chicken (also known as a spring chicken) that are perfect for a single portion. While there might not be quite as much flesh on the bones, the delicate, light taste is a perfect base for herbs, spices and stuffing’s. We at JPs offer plain or marinated Poussin.

What to serve with your spring chicken

Like normal sized chickens, spring chickens can be served with almost anything. If you choose our Lemon & Herb marinated poussin, serve with garlic green beans and new potatoes.

For the Portuguese flavourings, try some tomato rice, some Broa de Milho (Portuguese corn bread), or a light and zingy salad to balance the spice.

  • Our Spatchcock Poussin come in Lemon & Herb or Traditional Portuguese plain or peri-peri which we have carefully marinated for you all ready to cook.
  • Preheat the oven to 180°C/gas mark 4
  • Place a large non-stick frying pan over a high heat with a drizzle of olive oil. Use tongs to place the poussin breast-side down in the pan and fry for 2–3 minutes or until nice and golden
  • Transfer to a baking tray breast-side up, pouring over the balance of marinade from the bag and juices from the pan. Roast for 25–30 minutes , to check it is cooked, pierce the thickest part of the thigh – the juices should run clear. If still a little bloody, return to the oven for a further 5 minutes
  • Spoon a little of the juice from the roasting tray over the hot poussin. Serve immediately
