Pork & Leek Ragu with Mascarpone

Pork & Leek Ragu with Marscapone

Ingredients

  • 500g of pork mince

  • 1/2 a leek, finely chopped

  • 1 small onion or shallot, chopped

  • 1/2 cup of mascarpone cheese

  • 1 tsp oregano

  • 1/2 tsp of cracked black pepper

  • A splash of white wine or white wine vinegar

  • 1 tablespoon of green pesto

  • salt to taste

  • 1 tsp of butter

  • spaghetti

Directions

  • Cook spaghetti while preparing ragu
  • Fry off the leek and onion until soft
  • Add oregano and black pepper
  • Add pork mince to the pan and cook until browned
  • Deglaze the pan with a splash of white wine (or white wine vinegar), cook out
  • Remove from heat and add the butter and mascarpone and pesto, combine
  • Drain pasta and add to pan, combine, twist and plate
