Swahili Chicken (Delicious African Dish)

Swahili chicken is a delicious dish, with Kenyan influences and a little like biryani in style – this easy one pot dish is a great way to introduce African food into your diet.

A taste of Kenya to your table

Cardamom, chilli, coriander and cumin will make this dish fragrant and delicious. The sweetness of the caramelised onion, and cooking the rice in all these delicious flavours will produce a moreish dish.

Ingredients

  • 2 tablespoons peanut oil

  • 1.3kg chicken thigh fillets, chopped

  • 40g butter

  • 4 large onions (800g) chopped coarsely

  • 2 tablespoons water

  • 1 tablespoon cumin seeds

  • 1 tablespoon coriander seeds

  • 6 cardamom pods bruised

  • 3 cinnamon sticks, broken

  • 4 cloves garlic crushed

  • 2 cups basmati rice (400g)

  • 2 cups water, extra (500ml)

  • 2 cups chicken stock (500ml)

  • 2 red chillies chopped

Directions

  • Heat oil in large frying pan; cook chicken, in batches, until browned all over.
  • Melt butter in same pan; cook onion, stirring until soft. Remove half the onion; reserve the other.  Add water to pan; cook, stirring about 10 minutes or until onion is caramelised. Remove from pan; reserve.
  • Crush or blend cumin and coriander seeds until ground. Return first batch of reserved softened onion to pan with the ground spices, cardamom and cinnamon; cook, stirring, until fragrant. Add garlic, rice and water and stock; bring to boil, then add chicken and simmer, cover tightly, without stirring, about 10 minutes or until rice is just tender. Add all but 1 tablespoon of the reserved caramelised onion to pan, stir to combine.
  • Serve chicken sprinkled with remaining caramelised onion and chilli.
